Make It Monday: Clean Eating Brownies

This 9x9 pan of clean eating brownies packs in 118g of protein in the entire pan (more of less depending upon your protein powder, mine has 15g of protein per scoop.) In each of the 9 servings in this pan, there is over 13 grams of protein per serving. Also, there is almost 7 grams of fiber each serving too. These make up a cake-like brownie.




Clean Eating Brownies
3 scoops clean chocolate protein powder
4 T unsweetened baking cocoa
2 T chia seeds
1/4 C whole wheat flour
1/4 C oat flour
2/3 C sucanat
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
pinch of salt
1 can (15 oz) black beans (drained, rinsed & pureed)
1/4 C coconut oil (melted)
6 oz container of plain unsweetened greek yogurt
1/2 tsp pure almond extract
2 eggs

Directions: 

  • Preheat oven to 350 degrees
  • Blend together protein powder, cocoa, chia seeds, flours, sucanat, soda, powder, cinnamon and salt
  • Puree together melted coconut oil, black beans, yogurt, and extract
  • Mix together dry ingredients with wet ingredients, alternating wet mixture and one egg at a time
  • Spray 9x9 pan with olive or canola oil cooking spray
  • Bake for 30 minutes
