Make It Monday: Rhubarb Dream Bars

This recipe came from my mom. Not sure where she got it or if she came up with it herself. Maybe she will post on here the origins. Regardless, this is a family favorite. Actually, most people who enjoy rhubarb love these bars - what's not to love when you see how much sugar and butter is in these!






Rhubarb Dream Bars


Crust:
2C all-purpose flour
3/4 C powdered sugar
1 C butter

Filling:
4 large eggs
2 C granulated sugar (if you want to make it pink/strawberry use a packet of jello & add sugar to make 2 C)
1/2 C all purpose flour
1/2 tsp salt
4 C rhubarb, chopped

Directions:
Preheat oven to 350 degrees.
Combine flour & sugar, Cut in butter until crumbly. Press in the bottom of a jelly roll pan. Bake for 15 minutes. Remove from oven.
In the meantime, blend eggs, sugar (& jello), flour & salt. Fold in rhubarb
Spread over baked crust. Bake 40-45 minutes. Cool. Drizzle with icing (if desired - looks prettier!) Cut into squares.

I originally found this somewhere on the internet, many years ago. I added the gelatin to make it extra special, both for flavor and appearance; because let's face it, most rhubarb is not a good looking color.

These looks so good and it's so easy to make. My rhubarb in the backyard is just up and ready to use! Maybe of the 4th!
